Chicken Fajitas



Chicken Fajitas
Chicken fajitas! So easy to make, and so quick. A little bit of back story. The word “fajita” means “little belt” from “faja” for strip or belt, and the diminutive “ita”. It describes a skirt steak, and fajitas were traditionally made with grilled skirt steak, though now they can be made with chicken, shrimp, you name it. The method is to quickly sear the meat on a griddle or grill, slice and serve with quickly seared peppers and onions and flour tortillas

Ingredients:

1 1/4 to 1 1/2 pounds skinless, boneless chicken breasts
Salt
2 Tbsp canola, safflower, peanut or grapeseed oil (a high smoke point oil)
1 large onion, sliced lengthwise (root to tip) into 1/4-inch strips
3 bell peppers of various colors, sliced into 1/4-inch strips

Marinade
2 Tbsp lime juice
3 Tbsp olive oil
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 jalapeno, seeded and minced
1/4 cup chopped cilantro

Extras
8-12 flour tortillas
Salsa
Sliced avocado
Sour cream
Thinly sliced iceberg lettuce dressed lightly with salt and cider vinegar

Method:

1.      Chicken breasts come in different sizes. If you have chicken breasts that are around a half pound each or more, you will want to slice them in half horizontally, so that the center thickness is around 1/2-inch to 3/4-inch thick. (We do not recommend pounding the chicken breasts, doing so will not result in the right texture/consistency for fajitas.
2.      Mix all the marinade ingredients together in a glass or plastic container. Add the chicken, mix well, cover and let marinate at room temperature for 1 hour. (You can marinate them in the refrigerator for up to 8 hours, but remove them an hour before cooking so that they can come closer to room temp.
3.      Remove the chicken from the marinade. Wipe off most of the marinade and sprinkle the chicken pieces with salt.
4.      Heat a large cast iron frying pan on high heat for 1 to 2 minutes. Add a tablespoon of canola oil (or other high smoke point oil) to the pan. As soon as the oil begins to smoke, lay the chicken breast pieces in the pan. Depending on the size of the pan, and if you have had to cut the chicken breasts, you may have to work in batches. Let the chicken cook undisturbed for 2-3 minutes, until you have a good sear. Once seared well on one side, turn the pieces over and cook for another 2-3 minutes until well seared on the second side.
5.      Once seared on the second side, remove to a cutting board and cover with aluminum foil to rest for 5 minutes. Here's a tip. Stack the seared chicken breasts and then cover them in foil. Together they will retain heat better as you cook the peppers and onions. If you want to test for doneness, cut into one piece with the tip of a sharp knife. It should be just done, if not, you can put it back in the hot pan for a minute or two.
6.      While the chicken is resting, cook the onions and peppers. Add another tablespoon of oil to the frying pan. Heat on high. As soon as the oil is hot, add the onions and peppers to the pan. Use a metal spatula to scrape up some of the browned bits from the chicken and stir to coat the onions and peppers with the oil and brown bits. Spread the onions and peppers in an even layer in the pan. Let them cook undisturbed for 2 minutes. You want them to sear with some blackening. Stir the vegetables and continue to cook for another 2 minutes.
7.      Slice the chicken against the grain into strips. Serve at once with the peppers and onions, some warm tortillas, and sides of shredded cheese, salsa, guacamole, and/or thinly sliced iceberg lettuce dressed with vinegar and salt.


Moroccan Spiced Grilled Chicken Breasts


Moroccan Spiced Grilled Chicken Breasts
I’ve recently been cooking my way through some of the older recipe on Simply Recipes and came across this gem—Moroccan spiced grilled chicken breasts. It’s a winner.
Boneless skinless chicken breasts are marinated in yogurt mixed with a Moroccan spice mix of cumin, paprika, and cinnamon, and then simply grilled. The yogurt helps tenderize the breasts and the marinade brings life to otherwise boring boneless skinless chicken.


Ingredients:

1/2 cup plain yogurt
1 Tbsp lemon juice
1/2 cup chopped fresh cilantro
1 Tbsp olive oil
2 cloves garlic, minced
1 1/2 teaspoons ground cumin
1 teaspoon paprika
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 pounds skinless, boneless chicken breasts

Method:

1.      Mix the marinade ingredients (yogurt, lemon juice, cilantro, olive oil, garlic, cumin, paprika, cinnamon, salt, and pepper) together in a medium sized bowl. Add the chicken pieces to the bowl and thoroughly coat with the marinade. Cover with plastic wrap and chill in the refrigerator from 2 hours to overnight.
2.      Heat your grill on high heat if you are using a gas grill, or prepare coals for direct heat if you are using charcoal. Allow for one side of the grill to be the "cool" side. If you do not have a grill you can use a cast-iron grill pan on your stove.
Grill the chicken breasts over direct high heat a couple of minutes on one side. Then turn them over and move them to the cool side of the grill. Cover and cook for a few minutes more, until the chicken is cooked through.
(The easiest way to test for doneness is with your fingertips. See The Finger Test to Check the Doneness of Meat. Or use a meat thermometer, remove the meat from the grill when the internal temperature of the chicken breast reaches 165°F.)

Take care not to overcook, as chicken breasts can easily dry out.

Yummy Honey Chicken Kabobs
"Honey chicken kabobs with veggies. You can marinate overnight and make these kabobs for an outdoor barbecue as a tasty alternative to the usual barbecue fare! Fresh mushrooms and cherry tomatoes can also be used. (This can also be done in the broiler.)".

Ingredients:

1/4 cup vegetable oil
1/3 cup honey
1/3 cup soy sauce
1/4 teaspoon ground black pepper
8 skinless, boneless chicken breast halves - cut into 1 inch cubes
2 cloves garlic
5 small onions, cut into 2 inch pieces
2 red bell peppers, cut into 2 inch pieces
Skewers
Method:

1.      In a large bowl, whisk together oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).
2.      Preheat the grill for high heat.
3.      Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers.
4.      Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.

Spicy Chili Chicken


Spicy Chili Chicken
This Malaysian curry recipe is from Meribe Jaman, born in Cocos Island but who came to Australia in 1974. Meribe is part of the Cocos-Malay community of Geraldton, WA. This makes enough to serve eight people, so it's great for large families or entertaining friends..

Ingredients:

2 tbsp coriander seeds
1 tbsp fennel seeds
1 tbsp tamarind paste
1 tsp ground turmeric
2 tsp belacan (shrimp paste)
6 garlic cloves
1 brown onion
generous handful of large red dried chilies soaked for a few seconds in hot water
pinch of salt
6 candlenuts
375 ml (1½) cups water
vegetable oil
2 whole chickens, jointed or 2 kg chicken pieces with bones
400 ml coconut milk
1 lemon, juiced
jasmine rice, to serve

Method:

1.      Blend the coriander seeds, fennel seeds, tamarind paste, turmeric, belacan, garlic, onion, soaked dried chillies, salt and candlenuts to a thick paste, adding the water to make it smooth.
2.      Cook the paste in a large wide pan with a little oil until aromatic and then add the chicken pieces and coconut milk, reserving about 100 ml to add at the end.

3.      Cook the chicken for about 30 minutes or until tender and cooked through. Add the remaining coconut milk and lemon juice and serve with steamed rice.

Chicken Thighs in Tomato Sauce


Chicken Thighs in Tomato Sauce
For this dish, I use boneless, skinless chicken thighs that I stuff with breadcrumbs, roll and tie, then slowly simmer in a sauce of chopped tomatoes and red wine. Once the chicken is cooked, I slice it and keep it warm topped with a little sauce. We enjoy the rest of the sauce on pasta, and pass the chicken as our second course. I have recipes that are delicious and suitable according to your taste.
Ingredients:

For The Chicken:
5 Tablespoons Olive Olive Oil, Divided
1/4 Cup Finely Chopped Onion
1/4 Cup Finely Chopped Pancetta
3/4 Cup Homemade Fresh Breadcrumbs
3 Tablespoons Finely Chopped Parsley
1 Teaspoon Dried Oregano
Salt & Pepper To Taste
1/4 Cup Grated Pecorino Cheese
8 Boneless, Skinless Chicken Thighs

For The Sauce:
2 Tablespoons Olive Oil
1/2 Cup Finely Chopped Onion
5 Cloves Garlic, Minced
2 Cups Robust Dry Red Wine (Chianti Works Well)
1 (26 Ounce) Can Chopped Tomatoes
1/3 Cup Chopped Fresh Parsley
1 Teaspoon Dried Oregano
4 Tablespoons Finely Chopped, Fresh Basil
1/2 Teaspoon Red Hot Pepper Flakes
1 Pound Dried Pasta of Choice
To Serve:
Grated Pecorino Romano or Parmesan Cheese

Method:

1.      To prepare the chicken, heat a frying pan with 3 tablespoons of the olive oil until lightly smoking.

2.      Add the onions and pancetta and cook for about 5 minutes, stirring often until the onions are soft and the pancetta is cooked.

3.      Add the breadcrumbs, parsley, oregano, salt and pepper and stir to mix well.

4.      Remove from the heat and stir in the cheese.

5.      Take each chicken thigh, and fill with about 2 tablespoons of the breadcrumb stuffing.

6.      Roll the chicken up tightly, and tie securely with kitchen twine, and continue to stuff, roll, and tie the rest of the thighs.

7.      Heat the remaining 2 tablespoons of oil and brown the thighs on all sides over medium heat until golden brown, about 10 minutes.

8.      Set the chicken thighs aside until needed.

9.      For the sauce, in a large stove-top casserole dish heat the oil until lightly smoking and then cook the onions until soft and translucent, about 5 minutes.

10.  Add the garlic, and cook until fragrant, about 2 to 3 minutes.

11.  Add the wine and increase heat to a slow boil and cook until it has reduced by half.

12.  Add the tomatoes, parsley, oregano, basil, and pepper flakes.

13.  Bring to a boil, then reduce to a simmer and add the chicken to the sauce.

14.  Cover the pot, and cook for about an hour and a half.

15.  Remove the chicken from the sauce, cut off the twine and slice crosswise into pieces and keep warm.


16.  Use the sauce on your pasta of choice, and serve the chicken on the side.

BBQ drumsticks with slaw
These deliciously sticky chicken pieces are best eaten with plenty of napkins at the ready. A barbecue grill is a device for cooking food by applying heat directly from below. There are several varieties of such grills, with most falling into one of two categories: gas-fuelled and charcoal

Ingredients:

8 chicken drumsticks
150ml barbecue sauce
For the slaw
1 large carrot, grated
½ white cabbage, shredded
1 red onion, thinly sliced
6 tbsp salad cream
crusty bread, to serve

Method:

1.      Heat oven to 200C/180C fan/gas 6. Slash the chicken with a sharp knife and toss with the barbecue sauce in a roasting tray. Season with black pepper and roast for 45 mins, basting every 15 mins with the sauce from the tray, until sticky and cooked through.


2.      Meanwhile, make the slaw. Mix all the vegetables together in a large bowl, then toss through the salad cream and some seasoning. When the chicken is cooked, serve with the slaw and some crusty bread, if you like.

Ingredients:

2 tablespoons vegetable oil, divided
3/4 cup pine nuts
1 pound ground chicken
3 tablespoons minced fresh garlic
3 tablespoons minced fresh ginger
1 tablespoon Thai Kitchen® Premium Fish Sauce
1/2 cup hoisin sauce
1/4 cup minced fresh cilantro
1/2 teaspoon sesame oil
24 to 30 Belgian endive leaves

Method:

1.      HEAT 1 tablespoon of the oil in large non-stick skillet on medium-high heat. Add pine nuts; cook and stir until golden brown. Remove from skillet; set aside.
2.      HEAT remaining 1 tablespoon oil in same skillet on medium-high heat. Add chicken; stir fry until browned. Remove any excess liquid from skillet. Add garlic, ginger and fish sauce; stir fry 2 minutes. Remove from heat. Stir in hoisin sauce, cilantro and sesame oil. Cool slightly. Stir in pine nuts.

3.      TO SERVE, divide chicken mixture among endive leaves.

Hyderabadi Dum Ka Murgh


Hyderabadi Dum Ka Murgh
Whole chicken marinated leisurely in a host of spices along with cashews, chironji and fried onions. It is slow-cooked 'dum style.

Ingredients:

1 chicken, whole cut-up
2 Tbsp cashew nuts
1 Tbsp chironji or buchanania lanzan
1 cup sour curd, well beaten
1 cup deep fried onion
2 tsp ginger paste
2 Tbsp garlic paste
1/2 tsp turmeric powder
1/2 tsp kashmiri red chilli powder
2-3 green chilli, chopped
1/2 cup mint leaves, chopped
1/2 cup fresh cilantro, chopped
1 Tbsp shahi jeera
4-5 green cardamom pods, crushed
2 cinnamon sticks
5-7 cloves, crushed
1 tsp cumin seeds
2 tsp coriander seeds
Juice of 1 lemon
3 Tbsp vegetable oil
1 Tbsp ghee or clarified butter
Whole wheat or atta dough
Salt, to taste

Method:

1.      Add cashew nuts and chironji in a spice grinder and dry grind them to make a fine powder. Take the ground nuts out of the grinder and put aside.
2.      Now add cumin and coriander seeds and make a fine powder with them. Keep it aside.
3.      In a large non-stick pan, add chicken, nut powder, curd, fried onion, ginger-garlic paste, chopped chillies, chopped mint and cilantro, turmeric, red chilli powder, cumin powder, coriander powder, cinnamon sticks, cardamom pods, cloves, shahi jeera, lemon juice, salt, vegetable oil and ghee in the pan. Mix well.
4.      Leave the marinated chicken in the pan for at least 2 to 4 hours.
5.      After 4 hours take the lid off the pan and seal it with the atta dough and put the pan on medium heat to cook the chicken for at least 35 to 40 minutes.
6.      After 40 minutes, turn off the heat but do not open the lid. Leave the chicken as it is for 10 minutes.
7.      After 10 minutes cut the seal and open the lid.

8.      Chicken is ready. Serve hot with rice or any Indian bread.

Chicken Shawarma


Chicken Shawarma
Shawarma is one of kid's favorite food, why not you try it at home? Follow this recipe you can't go wrong with this homemade version of Chicken Shawarma..

Ingredients:

Chicken ½ kg (boneless)
Garlic paste 1 tsp
White pepper 1 tsp
Salt 1 tsp
Soya sauce 1 tbsp
White vinegar 2 tbsp
Cinnamon 2 tbsp (grinded)
Oil 2 tbsp
Chili sauce 3 tbsp
Yogurt 3 tbsp
Pita bread 1
Onion slice as required
Salad leaves as required
Tahini Sauce:
Tahini 2 tbsp
Yogurt ½ cup
Garlic paste ½ tsp
Salt ½ tsp
White pepper ¼ tsp
                
Method:

1.      Cut boneless chicken into strips.
2.      Marinate chicken strips with garlic paste, white pepper, salt, soy sauce, white vinegar, cinnamon, chili sauce and yogurt for an hour.
3.      Heat 2 tbsp oil in frying pan, add marinated chicken and fry for 10 minutes until it tenderize.
4.      Now put fried chicken over pita bread.
5.      Then add tahini sauce, onion and salad leaves and fold it.
6.      Serve hot with tahini sauce or chili garlic sauce.
7.       Tahini Sauce: Add tahini, yogurt, garlic paste, salt and white pepper in blender and blend well.
